There is an image shown below of a Han Solo Carbonite ice-block / ice-lolly / popsicle, but I'm not sure if it was an actual buyable product or just a fan-made thing.

It wouldn't be too hard to do, just fill the 3 3/4" figure's Carbonite block with water or fruit juice and put into a freezer. I'm not sure if the Galactic Heroes version is hollow, but if it is you could make mini ones as well.

You could use chocolate instead and let it set in the fridge to have a Han Solo Choconite block.

Either way you'd have to heat the plastic casing slightly to get them out.
